Potassium Bitartrate (Cream of Tartar)

Potassium bitartrate, also known as cream of tartar, is a byproduct of tartaric acid. It is commonly used in baking and is a component of baking powder. When added to portland cement it retards the setting rate, and is used especially in hotter temperatures (for example cementing oil wells). Cementing oil wells requires the cement to pass through narrow channels, and the addition of retarders such as potassium bitartrate prevent premature stiffening, allowing the cement to reach its destination.
